What is Diatase Enzyme Activity?
Generally, the enzyme activity is measured as diastase activity. The significant number to express this is in a diastase number (DN).
Honey standards specify a minimum DN of 8 in processed honey. DN of 0 is considered as fake honey.
Active Enzyme Pure Honey has been tested with diastase enzyme activity at 36.6DN, and is considered as high enzyme activity and rare in the market.

Active Enzyme Pure Honey is high grade honey harvested from natural forests in cool highlands of Chiang Mai, Thailand. These areas are the perfect feeding grounds for the bees. Honey is carefully packed by only using minimal heating (not to be heated above 40'C (104'F) in order to ensure the honey retains most of their natural enzymes and nutrients.
Depending on nectar composition, concentration and the bees, the enzymes potency varied with different sources.
